You can join higher level parties. We had a lvl3 Scholar yesterday and we were all lv 8-9, we killed stuff and did some NMs and the Scholar leveled up to lv6 in an hour. There's space for everyone if they accept you, and so far you can go to higher level parties as a healer, since you will heal the same numbers no matter your level.
If you don't have a healer, then yeah, you might need to level up with people from your level. Shout or make a PF with people around your level, and solved.
Still, with a party of 4 you can level up fast and do all NMs without any problem. There's no need to be 8 members!
Every content gets old when time passes, like new PVP maps for example, when the first day the queue is 5 minutes, and weeks after it takes hours to pop.
Gear will always be outdated. Every single relic was outdated. Raid gear will always be the top one, we knew that since 2.0.
And it's not Diadem, not even close. In Eureka you have your own level, and NMs spawns when you pop them (not just random FATEs like Diadem).
And it might look pretty simple, but you can use that to summarize FFXIV's content as well; "it's all about leveling up and gear up, this is so boring!"
Maybe the problem is that you don't like the game? What do you expect from an MMORPG, or what did you want Eureka to be?
