I used to play another pretty old mmo a while back that had instanced housing and also a gardening system. When you purchased a house it was both the house and the exterior grounds. So with gardening you had the option of palcing pots inside the house itself (not sure why this isn't a thing in this game?) or you could just garden right in the ground outside. Not sure why instanced housing would ONLY have to be the interior.

You can grow things in pots. The problem is it doesn't allow you to crossbreed like the outdoor garden does. Crossbreeding is how you get the really good stuff such as minions or Thavnarian Onions.

Not with those Servers, let alone they cannot handle 300 Players in a single Instance before the Servers on Square Enix's Side start to crumble and disconnect everyone.

I just say 300 Players in the Lochs is a good Stress Test on their Server, now do that with over 50.000 Instances loading, you can kiss the Server Goodbye or you need to cut out a lot of Gameplay Options (Such as Inventory) just to make it enjoyable.
People always think they snip their Fingers and the Magic is done flawlessly, ya sadly not in Reality.
In the current implementation the interior of the house is an instance and only loaded when the player enters. The wards themselves are persistent. If SE were to fully implement instanced housing both the interior and exterior would be part of an instance and only loaded when the player enters the property. Overall it should require less resources and be easier to manage than the current ward system.

Oh I see. I'm not really much into player housing so don't really know much about it in this game. Couldn't they just add the ability to do that with pots? Seems like kind of an arbitrary restriction.

Yes is is arbitrary. While you won't get the same yield apartment owners have wanted to be able to crossbreed from pots for a while now as. I've always thought it was a reasonable request
