Why will there be a shortage of tanks more than usual? I know I'll have three to level up, and as a PLD main, I'll likely be levelling that first (alongside casually levelling RDM and SAM).

Because a lot of tanks and healers will try out the new Jobs first even if they eventually go back to tank and healer. Just in my FC there are 2 tanks and a healer who have said they intend to level in Stormblood as a RDM or a SAM regardless of what role it plays.
It will be HW in reverse. It will balance out eventually but to start with you will see sharp shifts in queues. In HW the surge of people trying out DK lead to very short dps queues and dps even being the Adventurer in Need. Stormblood will have the opposite effect with a surge in the number of dps in queues leading to much longer dps queues, at least for probably the first month.
Because a lot of them will switch to RDM/SAM. With not new tank classes, this ones will draw all attention.
People tend to have a main and an alt job that they switch between. And there are tanks that only play tanks because it's the closest to a Sword job there is. So there are tanks that will put the tanking behind them and focus on the new DPS sword job.
Because while the tanks have 3 tank jobs to level up, the dps players will have 9. And like you said the tank main players are also interested in the new dps jobs.
With this kind of comparison, I tend to split DPS into melee, ranged, and caster. But that wasn't even my point. The point is that NIN was awful because it came out in 2.4 when everyone was at top level with the jobs that they wanted. In stormblood, everyone will have 15 jobs (with new skills and gameplay to try out) to level, not 2, and there will be plenty of people queuing as tanks and healers because they want to level their existing mains and see whats new there before trying the new jobs. There may be problems of course, it will be a naturall chaotic few weeks/months, but it won't be as bad as people are making out.

I play Tank, but I also play DPS classes.
I however tend not to focus on Ranged or Caster DPS.. Many people are exactly the same as this, in fact a lot of players level a DPS and a Tank (or Healer).. Divide the number of DPS with the number of "styles" of DPS you have and you have a more accurate number...
Just because someone mains a DPS job, doesn't mean they like ALL DPS roles (Melee/Caster/Ranged)

This. Heck, I dont even like the other tank jobs. I leveled everything to 60, but I really only play PLD and DRG, and occasionally WHM and Bard. I avoid casters like the plague, I just dont enjoy them. Not a big fan of Nin or MNK either, so that just left me with 1 melee dps to play, out of 7.I play Tank, but I also play DPS classes.

Pretty much agree. Tossing all DPS together is a grave mistake. I'll make a list of my preferences:
1 - Casters
2 - Pet classes
3 - Ranged
4 - thief/rogue/burglar/assassin/ninja with daggers and stealth
5 - Sword melee
English is NOT my mother language, French is. Use my recruitment code MV9YGNXD before paying your sub and get cool items. http://sqex.to/Cz9
Because there are more weeaboos than edge lords. They took the balance attained from a popular job like Dark Knight and shot themselves in the foot by adding a more popular job as a dime a dozen role.
