We Can't/Shouldn't be able to because the other Grand Companies would also know you as a person who defected from the other, or they would think you're a spy.



Because you swore an oath of allegiance to said Comapny.
What good is your word if you change it on a whim? How can any Grand Company trust your allegiance to their organization and their cause if you are so easily swayed simply based on the Rewards you are given?
If I were the Commander of any of the Companies, I would not allow you to join my ranks because you show no sense of honor and your oath means nothing.

It's so you can't do quests for your company, get the rewards, buy stuff, then quit and join another one - do their quests, get their rewards, et cetera.
And it makes sense story-wise; once you're in, you're in.
