I once had a dream irl that I saved Estinien's butt from dragons, so I am kinda leaning towards him now.... (Since they killed off the pervy knight :< I still visit his grave around once a week.)
A romance sidestory with Thancred sounds amazing
A bioware-esque style romance story arc does sound interesting. But it may have the same bioware problem, you get with the character and then the relationship is never mentioned again by anyone. Or you can just powerlevel their affection by giving your sweetheart enough presents, because there's no love like store bought love. Besides, we're the Warrior of Light, the destined champion of the good people of Eorzea etc. Such a dangerous line of work can make it very easy to create widows and orphans, plus I don't expect our sweetheart to be so happy about us running off to save the world and throwing ourselves in to danger.
Any storyline like that would probably be a kiss, a declaration of love with an understanding of why the two can never settle down, and an "I'll always love you" sort of line before they go off to live their life someplace! That being said however, I'd enjoy some more general interaction and conversation trees with the NPC's that change how they act towards you later on.
Maybe a questline were you help 2 NPCs to become a couple.
In 1.x as an example, there was a sidequest where you helped a Miqo'te in Limsa to cook a soup for her (future) lover, spiced with an aphrodisiac.
Or the one NPC (also in 1.x) in Black Shroud, who wrote poems about Opo-Opos.
