After a couple of weeks, when people broke in to the content, the voice chat becomes less viable. You've been there, talking about other stuff while raiding. It becomes more social (adda to the fun factor I'd say) than the firts week. I think this is when you don't need it anymore. I still would since is just more fun imo.

I also think that people who are able to talk and play (good), are of more value than someone in tunnel vision mode. On voice chat you can make adjustments on the fly or think steps ahead with them knowing. For me it adds to the encounter, but it's just what I'm used to. Some people play better when they go mute mode. To each its own.
Why is it more value if you are able to make adjustments on the fly or "think steps ahead with them knowing"? A raid leader identifies issues and devises strategies that work based on the issues at hand. Strategies get discussed at the start of a fight and every player is accountable for knowing what they need to do and figuring out how best they can personally execute these strategies. A good player will identify where he or she has messed up and will adjust accordingly or will be informed what the mistake was by a more knowledgeable player (assumed to be the raid leader).

If someone requires instantaneous feedback all the time to do their job, might be time to replace him or her since having to babysit people to keep them remembering that they have a job to do and focus on what they should be doing is counterproductive and adds unnecessary stress and animosity. VOIP is convenient for discussing strategies before a raid in the event you have a group of people with reading comprehension issues. I personally have a listening comprehension issue where words fly over my head and I often miss or forget things as someone is talking to me whereas in writing I can pick it up fairly easily and have something to reference back to.

I agree with you that the conversations can be great fun. I used to do voice chatting when I played League of Legends which required a lot less concentration than a raid boss in an MMO (IMO lol) and we had so many good times in there. But MMOs pull me into the world and I just sorta want to forget real life exists when I'm sitting in here so even if I could focus well enough in a VOIP during raids, I probably wouldn't anyways.
