Essentially your DoW and DoM's are your poachers. at least thats how I get things like horns hooves, meat and such.

Yes, but as I said, you don't have any control over what you loot, whereas gathering allows you to uses skills to attain this goal.

Would I need to go and poach 1 item, then gather shards, then mine for another mat, then craft it? It starts becoming too much.

You already "poach" one item as a DoW/DoM, mine or log another mat, then craft it.

You do know that in the Black Shroud poaching is a crime punishable with death don't you?

Yet, none of us were punished when our levequests required that we slay hundred of animals in the Shroud.
