So after a few days of going back and forth between plum and lavender blue, I finally got colibri pink from feeding a valfruit at lavender.

There is NO 100% between steps. You can get something similar to a "HQ" which means you will skip 1 step in the colour-tree that you're currently in. You also -should- care about the messages since the 'beginning to grow new feathers!' message is the clear cut sign that your chocobo will change colour.
The amount of those message indicates the amount of times that your chocobo changed colour.

You are feeding your chocobo way too many fruits and are basically wasting your resources. Anything between 1 to 5 O'Ghomorro berries would've gotten you to Cork Brown since it is the first step in the O'Ghomorro Berry tree. So the 3 Valfruits were redundant.

It's now accepted that each new feather message doesn't count as 'additional fruit are being used' and you should go 1 fruit at a time if you want a specific color; get to the first feather message and stop. If your color is really far down the line, feel free to mass feed on the first session, but I'd do single feed adjustments after that.
