Valfruit, Ciedalaes Pineapple and Doman Plum all lighten (decrease) the saturation of the color, aka subtract from the total for that color value pushing it closer to 0.
This would be correct if that's all the fruits were doing. But it seems that what they actually do is lower one and raise the other two. Plums raise cyan (blue and green), valfruit raise magenta (red and blue) and pineapples raise yellow (green and red). White is still coming from raising all of the values as high as possible.

The "deepen" fruit raise one and lower the other two.

I have not personally observed this effect at all. I have only seen them take away color, not add it. I am coming up on another 6 hour period being finished, so perhaps I will be proven wrong if the chocobo comes out a color other than what is predicted.

By your own reasoning, this would make it impossible to get white, btw.

There are already verified snow white chocobos.

It is an unnecessary complication to believe that the fruits that "lighten" colors actually secretly darken others.

No, I used that reasoning to obtain my Snow White chocobo. When you use a fruit to deepen or lighten a colour it's increasing/decreasing the other 2 colour hues behind the scenes.

That still doesn't make any sense though as you would not be able to obtain perfect white this way. Please explain your reasoning, because I'm afraid I just don't see it.

You don't need perfect white. You simply need to get all three values high enough for the game to accept it as "Snow White".

I can understand that (especially considering how we don't have pure white or black as dye colors in the game anyway).

I still think white is at the lower end of the scale (being less saturated) and black at the higher end of the scale (being more saturated)

Also: If the "lightening" foods add as well as take away color, why hasn't anyone suggested the darkening do the same? (for example, add red might also subtract a little green and blue)

I believe it has been mentioned for both lightening and darkening foods back several pages; I don't think the increase/decrease is huge.
