FFXIV isnt that difficult, and it'd eventually come down to bosses being slowly wittled down to death, or healers running out of MP (but there are easy ways to restore it) so really, it would just remove any challenge from it if there werent enrages.

Name one fight in the game that has the amount of HP and the basic invulnerability as absolute virtue (before nerf, considering scaling of damage done between XI and XIV). There is no such thing in this game and no fight would last 20+ hours. I don't find this to be a very good argument, as no boss as such an amount of HP.
