If the new dungeon matches the pattern of the others, it's a safe assumption that there'll be some "natural" stuff as we first enter (in this case, looks like mostly Vilekin that have made the ruins their home) moving into the Voidsent destroyers of the civilization and the Ashkin dead of its former inhabitants. We'll see, though. Plenty from 2.00 and 2.1X to keep me busy fact checking.

In the meantime, Waiting for a Moon to Fall outs Golems as Soulkin so I'm going to keep them there for now and assume this classification is correct. Dullahan, though, is still tricky. Many Dullahan are said to be vengeful spirits who have "reclaimed" armor - implying that they are Ashkin (and many Dullahan in past Final Fantasies are undead), implying that there's more to them than "ancient golem."

A Random Sampling of Remaining Unknowns (Not Exhaustive)
    • What are the true species of Golem? (Brown, Black Feet, Orange Glow) (Tan, Brown Feet, Green Hlow) (Yellow, Gray Feet, ??? Glow)
    • What's the difference between Opo-opos and Galagos? Is the former the genus and the latter the species? Vice versa? Are galagos just a frequent name but neither label?
    • That whole thing with the vultures/condors/buzzards is still in the air.
    • Has anybody stumbled across the blue cobra that is not the glowing Allagan variant (Hygeia)?
    • Is the snow goobbue a different species or the same old goobbue covered in snow?
    • Ferne implied the genus name for Bogies and Revenants is Ghosts, so what are the Bhoots? ... Bhoots?
    • Where can I find some red-eyed spriggans and how do they differ from yellow eyed spriggans?
    • What are the other names for Gargoyles? Red seem to be the base.
    • Are flans no longer called flans, but puddings?
    • Are wights no longer called wights, but skeletons?
    • As the territorial names imply, are snurbles gold now? And phurbles white?
    • Are aurochs and buffalo different species? Which is which? (Yet to track these down in person to see the subtle color difference)
    • Are Sprites and Elementals the same Class? What is this class? Are primals linked to this?

Sorry to just poof in here and everything. But based upon previous discussion/revelation of the Ziz/Pelican/Beak species naming being a local thing. Perhaps the same can be true here for Opo-opos and Galagos. Opo-Opos being primarily in the Girdania region and the Galagos being located on Limsa Lominsa. this even translates to the Opo-opo subspecies of Lemurs with Lemurs being Giridania and Ringtails being in Limsa again. Just a thought I'd might put out there

Okay then. that's what I'll do. I'll tell you a story. Can you hear them? All these people who lived in terror of you and your judgement. All these people who's ancestors devoted themselves to you, sacrificed themselves to you. Can you hear them singing?

Which is pretty funny, considering ALL of the above types used to be in Gridania only in 1.0. They certainly branched out since then.

If I were to lean on anything it'd be that Opo-opo is the Genus. Probably not the best foundation to stand on, but that was the lowest level monster of the type that showed up in FFXI, and from there they received different names. (Bullbeggar, etc)

Has anybody stumbled across the blue cobra that is not the glowing Allagan variant (Hygeia)?
The only snakes I've seen not in Coil are the Lake Cobras in Mor Dhona and the Coliseum Pythons in Halatali. I don't remember either being blue though. The Lake Cobras are red like the Caduceus, I could have sworn the Coliseum Python was green.

Where can I find some red-eyed spriggans and how do they differ from yellow eyed spriggans?
Can't say this is something I've paid very close attention to, but there are Spriggans in Copperbell normal, (two variants, a small one and larger one) Copperbell Hard, (2nd boss) at the Sil'dih Excavation site, (also a FATE boss) and just west of the White Wolf Gate of Gridania. (another FATE boss as well, Spiteful from 1.0) Can't really think of any other areas these guys are.

What are the other names for Gargoyles? Red seem to be the base.
Are these what you're referring to as mob types at the bottom of the gorge in Coerthas and in Amdapor Keep? I've only seen them referenced as Vodoriga.

Are flans no longer called flans, but puddings?
I've only seen them called Puddings in game.

Are wights no longer called wights, but skeletons?
Same as above, although there's something called a "Wight Wailer" on xivdb, but there's no info on it.

Are aurochs and buffalo different species? Which is which? (Yet to track these down in person to see the subtle color difference)
Not sure on these. There are Aurochs mobs in Middle/Western La Noscea (Western is FATE only) while the Buffaloes are only in Eastern La Noscea.

Can't really answer the rest of your questions.

The closest I've seen to blue outside of the Coil's Hygeia is this creep, and only his hood an an internal line are blue, and I can't find a good Lake Cobra photo but I think this may be the same pallet swap.

Edit: Reviewed the Hygeia model, definitely not. They are also very giggle-worthy when they are stiff-as-a-board rendered.
