Why is race and nationality ignored so much in the lore? (why does the lore fail)

I though most canadians spoke french? or with a semi weird accent. And before you go I'm dissing yall, I'm french canadian on my mothers mother side. My great granmother /grand mother came from nova scotia. And we still have family up there
