It is not possible. They would have to redo/modify the model significantly, and that's not going to happen. In fact it rarely happens in general in the industry for such art assets to be significantly modified except to fix bugs like inverted triangles.not possible bla bla bla
If you'd like, replace "not possible" with "not practical" or whatever synonym you like for "existing art assets pretty much never get modified after release". It's not a programming/technical issue its an issue with the art asset.

You lack the slightest idea on 3D modeling. The 3D model can be modified in several relatively easy ways. The relevant part can be made transparent via textures. It can be removed and added as a second model that swaps in, hell, if they want to do a lazy job they can just drag the vertices inside the neck and the helmet will become perfectly invisible.It is not possible. It's neither impossible or impractical. It's as possible and as practical as the visor toggle, which has in fact been implemented.

Don't be silly. Only nobility in the Middle Ages could afford the penta-melded helmets required to survive fights with dragons. And my character is poor, therefor I should be able to go helmet-less like a serf in the Middle Ages.
I would like to point you to Eve Online, where not only has the entire art asset in the whole game been modified(quite heavily I may add), many have been multiple times, including complete model change.
