"Immersion" is a ridiculous thing to begin with, but here we go, if you actually see a difference between watching it in the dungeon and the inn room, your basically telling me that when you play this game the world around you in your mind changes like you were just teleported into the game, the walls are changing and now you see a dungeon all around you, you actually think your fighting a dragon.

Immersion is the early stages of insanity, a story is a story, watching it in 1 pixilated area is the same as another.

You're over thinking it way too much. While you won't see a difference whether you watch it at the inn or during the dungeon, you will definitely FEEL the difference. The overall pacing of the dungeons and the cut scenes that follow provide a seamless yet engaging way to experience the story of the game.

Through gameplay you can give a player a sense of urgency that would not be felt otherwise if you were to just straight up watch a cut scene, and the cut scenes themselves are only half the experience, the gameplay that follows before and after is what completes them. Your logic would make sense if we were talking about a movie but we're not.

I know that SE is thinking of ways to encourage players to use the DF with things like the "MVP Vote" system, so how about this idea:

Grand Company Seal bonuses for repeat dungeon runs if at least 1 party member is a 1st-timer and watched all the cutscenes.

Maybe the speedrunners would be less upset if they got a bonus for being patient and Seals seems a better bonus than EXP (which you don't need at lvl 50) or gil which could be exploited by RMT.

Also to avoid Seal exploitation the bonus would only take effect if 1 PT member is a 1st-timer.
