They do bind once you fight mob lvl higher than ilvl (currently only in Coil). But if you don't wear them inside Coil you can sell them later.The HQ versions of Item Level 70 armor and weapons are actually better than Darklight and Primal Weapons with Materia. The armor is also dye-able and it is actually non-binding. It doesn't gain any spiritbond so if you repair it to 100% you can sell it once you get AF+1 or Allagan Armor. So, I'd say there are plenty of reasons to go with the crafted ILvl 70 gear over anything you can get in dungeons other than Binding Coil of Bahamut. Now, the cost of crafting these items is a completely different discussion and every player won't find that it's worth the trouble.
