Kinda pointless talking about "Wow" factor a month after release. I mean if the first month it's "Wow", then it's either going to crash and burn within 6 months or you will have a heart attack from all the friggin "Wow"s you will get.

The HQ versions of Item Level 70 armor and weapons are actually better than Darklight and Primal Weapons with Materia. The armor is also dye-able and it is actually non-binding. It doesn't gain any spiritbond so if you repair it to 100% you can sell it once you get AF+1 or Allagan Armor. So, I'd say there are plenty of reasons to go with the crafted ILvl 70 gear over anything you can get in dungeons other than Binding Coil of Bahamut. Now, the cost of crafting these items is a completely different discussion and every player won't find that it's worth the trouble.
Also, we have nothing between ILvl 70 and ILvl 90, so I suspect there will be gear from Crystal Tower and probably from crafting to fill in the middle. I doubt that there will not be any Ilvl 80 gear. I think it's still a little early to judge, but you are correct that at this very moment there aren't really any "Wow" items that will demand huge dollars on the markets.
They do bind once you fight mob lvl higher than ilvl (currently only in Coil). I don't think it's so much the gearing options as much as that the game has only been out less than a month and is already locked into a state of you either picked a good FC that's progressing at the same rate as you and can do lots of content with them and your pretty much already done with all current content(which is insanely too fast for an mmo)
Or you picked an FC that sounded good then turned into a ton of casuals that think their hardcore and not really progressing at all and all you can do is run boring easy instances over and over and over to get the same darklight as everyone else in the world in hopes of getting into a guild that will do the top content but more than likely won't
and the way their future content plan looks nothing is going to change about that. There will be a set for people that have and a set for people that don't
And the way stats are so incredibly oversimplified there is no reason to ever have more than that.
Look at the level 70 crafted vs darklight for one instance. You can slightly edge out darklight with the crafted stuff for like 6 times the effort. There's no point to it
Or Relic armor vs allagan armor, if you have a set group binding coil is easy and you will get allagan quickly which is almost identical to relic which takes about 5 months of grind but it's almost exactly the same there's no oo that perk sounds cool on any of it
Or weapons, there's relic > primal > (is there anything else?)

They did say they will add special effects to item later, after they think the balance is good. Which makes sense, so just be patient.

The iLvl70 HQ crafted gear is second only to coil drops/relic equipment. I.E. every crafted iLvl70 HQ is second best in slot. The problem is the average player sees saving as much gil as they're worth to be a much more difficult proposition than farming a similar ilvl70 item from tomstones. That, and there's no easy way to preview HQ stats unless someone is actually selling the HQ, even though you'd have to be insane to NQ the items.
And as far as leveling gear goes, you won't have the luxury of filling every slot from quest rewards on your 2nd, 3rd and 4th (etc) jobs. I sell a pretty fair amount of HQ mid level gear already, whenever I restore the umpteen vintage items my FC gets from dungeon runs.
Even in level sync'd content? iLvl55 gear gains spiritbond when fighting level 40 monsters in level sync'd content... I had never heard of this before, so I'm not doubting you, but I've just been selling all the iLvl70 gear I make, I've never tested that before.

I'm still curious about this spiritbond thing, that includes everything outside of the Coil? Even Hydra/Dhorme/Primals, etc?
