Easy answer is so players who don't have a so great system will know what to expect when they get the game, we kept hearing about low end PCs going to be able to play 2.0 and some would wonder what that would look like. Though Indie has a good point with that being the same trailer etc.

Because... if they are showing what low end systems can do - they are showing that not only does it not look as good but it also lags.
I just want to clarify because I know some may see it as an attack on SE. This isnt (for me) a hate on SE kind of thing, I want SE to do well - so I dont want them to be showing stuff thats not going to help them out. This would be something that didnt really help them. It also casues worry if thats representive of the game in general.
As someone has stated (Wynn I think) it would be wonderful if they could just show us the best screenshots they can do - the every system on full AA full post processing ambient occlusion, dof, max vision kind of thing.
Perhaps they arent ready for that - but since they are working on a game that is being played currently. Players are far more connected to the development process then usual. They need to keep a very close line of communication to us. Like weekly if not more kind of updates.
We are chomping at the bit - but dont make us weary - we want to share the awesome news and videos and subside concerns that appear in the forums through factual developer information. Cant do that if we dont know shit lol.
