
Feel the same way, missed the boat on the historic Hauchefaunt horse event and others - Square Enix has no shortage of code piling up that is forever beyond the reach of players to experience, buried in some forgotten section of the files.
FFXIV does re-run some events like ff15 and ff16 but after a while if it's too outdated they will always add it to the cash shop which ends up being the only place you can access it without that it would be gone for all new players. I ended up missing the FF13 event, but I bought the event sets much later on, which will be the fate of all old event items too.
Also, SE wouldn't suddenly have a change of heart and sell the old rewards for gil either from past events since that would p delusional.
Exaggerating much? The Mog Station is frustrating with how much they put on their, yeah, especially with old event items getting locked behind it instead of rerunning in-game. But comparing it to gacha is a stretch. In FFXIV, you buy something and you’re guaranteed to get it. In gacha, you can drop €100 and still not hit pity, and sometimes the game balance itself pressures you to pull certain characters or weapons. That’s actual predatory design. Mog Station items are strictly cosmetic, incredibly annoying that all the good stuff goes on there, yes, but not remotely the same level of FOMO- predatory driven monetization that gacha thrives on.

I really hate that they do this instead of a vendor being added to events, that sells all previous rewards for a currency you can farm participating in the event

Farming new fresh items and obtaining them? You better hurry to get them now, or few months later. If you come after 1 year or so, prices will skyrocket and no longer be cheap, thus you missed a chance to buy it at a low price when everybody was playing.
Also why they like to sell stuff "per char" instead of "per account"? How is that fair? When other games offer much more support? Crazy I know.
Trying to play with a friend but you just started? Better pay for that MSQ skip.
Doing achievements for new trains, mounts that come from stupid train achievements of kill 2000-5000 S ranks? Better do it at start of expansion or you'll never get it since they remove multiple layers and now it's harder and harder to farm.

As for the prices, it depends on which items you're talking about... but typically yes, they become more expensive as the majority of players move on the new shiny thing and those who stay behind get to make money by supplying the market. You can do the same, too.
Apparently there's a limit to the amount of things one account can share across all characters (???) and they've been mostly prioritizing mounts ever since. But I agree they need to take a look at it, they'd be better off in the long run if most items, especially limited items like Matoya's Hat, could be account-wide.

I'm not familiar with hunts, what are these layers they're removing that make these achievements harder to farm? As far as I know, trains still happen all the time, no?

Yes, of course, don't get me wrong—it is on them to fix it, and we should expect it. Especially they should have never made exclusive items locked behind physical merch character-only, it's just stupid.
I wouldn't say they're doing it out of malice, but they're not fixing it because people aren't giving them enough grief about it.
