Part of it is likely just that you're playing a tank and them being demigods as you say. DPS get killed due to tunneling (or maimed like you describe) in most normal content such as alliance raids, normal raids, hunts, boss FATEs like Mica and Serpentlord, CEs in OC, trials (and yes trials used to be nothing really until maybe Shadowbringers and Endwalker). Modern dungeons can get DPS that tunnel as well. Most things from Heavensward or Stormblood don't really get people much anymore but when they were current there were normal raids that beat a lot of parties up.
There's also the sheer repetition issue. Since they are scripted and you get used to them all you likely don't notice them being punishing like the more inexperienced players doing them. This is especially the case for dungeons which suffer both from the repetition issue and then item level growth. That's why the leveling dungeons always feel better. You've no need to repeat them a lot and they sync well.
Anyway, they are making a general adjustment to content where the difficulty will be variable depending on what you want, starting with the new Deep Dungeon and Variant Dungeons. I don't know about jobs but I'd expect something along the lines of skill trees in 8.0.
