You are thinking of the Ancient using their soul in case of when their creation magic requires ather more than they can provide. Like how that one amaurotine sacrifice himself to summoned quetzalcoatl, or how half the population is needed to summon zodiark. Basically they kind of convert their soul into aether, but that doesn't make the summoned creatures have its own nor the summoner's soul

Emet can see the color of the soul, and since WoL is not born from creation magic, of course they have soul. That's what makes him notice us back in elpis.
