Thousands of RPG developers around the world apparently disagree with you. There are very few developers like FromSoftware that are making games out to challenge players that thrive under pressure. The majority make them to appeal to a wider audience, including multiple levels of difficulty.

MMORPGs were never about challenge, either. The original point was to be online with hundreds or thousands of other players at the same time. Grind and world bosses that needed hundreds of players to zerg down (zerg being the key word, the body was more important than any skill) was added in as a way to keep players coming back but gradually got replaced with other forms of content as players lost interest in the grinds and drawn out battles with damage sponges.

You may want to go find another MMORPG if challenge under pressure and body-assaulting grinds are what you crave. This is not the game you're looking for.
