So yeah, I'll be pushing way beyond 30 as class, not as job just because I haven't cleared a MSQ part yet, and you want me to be excluded?

Ifrit is level 20 something, not level 30 or above which is what I specified. If you're trying to run Garuda or Titan and get into as a Gladiator, then those fights should be locked unless you have a Job Stone equipped, for example.

Another option could be removing classes and just starting as jobs at level 1.

You can get any and all classes past 30 before you even unlock the MSQ part that allows you to do the job.
Locking at 30 may probably not do anything, or even can even hinder the player on progressing.
Also in some cases you get class abilites past 30.
