The problem is that this should be possible by default, rather than SE's idiotic response of "make a new account".I don't think you've mentioned in which country your are, and it's probably a long shot because I doubt they will even comply, but if your are in the EU, maybe you could try to request a country change under the GDPR law that give the right to rectify your information, since if they do not respect that, they can be fined for millions of €.
Or if you're not in the EU, maybe check if there is some similar regulation in your country.
