    They're not going to.

The WoL gets one-upped by chumps during the main and sidequests all the time. You're as powerful as the story needs you to be. If you try to apply logic to it, it gets worse when you consider the New World is full of Lv90+ creatures.

For most of the expansions it worked tho. Maybe not for the mobs but for the boss progression. In ARR we were a normal adventurer, in HW we lost Hydaelyns gifts cause of Midgardsomr, in Stormblood the whole thing was about how we can't win a war just alone no matter how powerful we are, ShB we got thrown into a new world and pumped full of light until we broke, EW well had the end of the universe and despair itself. So up until EW there was some sort of not so steady threat progression, especially when it came to the story bosses of the expansions.

But i can't really see that in the future, it makes no sense why anything should be more powerful than us by now. Was weird alone that after defeating nidhogg, zodiark etc. now Zeromus which is just dragon+zodiark shard is more powerful than us.

But yeah, maybe it is wrong to try to apply logic to it...

Which will likely be the case here. Sure we could murderhobo our way through everything, but that'll just cause more problems. So we'll just spend most of the expansion, after figuring out who the main enemy is, convincing the people that said enemy needs a good murdering before we do it.

In a world where food literally converts into aether for spellcasting, dieting must not be much of a thing.

They actually make a specific point in the aftermath of 5.3 that casting spells needs to be recharged by eating food (at least when you don't have a giant aether battery providing power instead).

We eat aether, like Zero did with the apple, and more. The problem of our sides is the "more".
If we were only aether, what the point of bury a corpse (why are there corpses)? Or why did the scions need their bodies back?
We have "a physical soul", this soul need aether and we are able to convert soul in magic, but the body need something else, for example archon bread XD

Non-interchangable types of aether, apparently? Permanent corporeal aether and then "fuel aether" to power it and keep it alive?

We can only go on what the game tells us, and that is that both Krile and G'raha talk about feeling drained and hungry after spellcasting, and then we have Zero demonstrating that there's essentially no practical difference between direct-absorbing aether from a food object and eating it, besides that you get to enjoy the taste of it.
