Some things I do not like.

I love this game more than any other MMO I've played. However, I feel somewhat limited in the jobs I can play. First, I'm an older player. Second, I have arthritis. Third, I've had two strokes.

The main issues for me (and I suspect I'm not alone), are the sheer amount of abilities some jobs have and that some jobs have unnecessarily complex mechanics in the higher levels. Most jobs have too many abilities that do similar things. Why not combine these into a single ability that's more effective overall? Don't get me started on SAM mechanics. I can't remember all the "combos." I gave up on that one. Have you seen the rotations for some of the jobs, when shown visually, people have to make flowcharts! Seriously, this is not okay. If most people can handle it, fine, but not everyone can.

YOU KNOW WHAT GRINDS MY GEARS?!
I do not like that I can only queue up for ONE roulette!

Not every job is for every person nor do you have to play every job. Besides that, the moment we start dumbing down jobs so that we can be absolutely certain that everyone can play them 100% efficiently without any problems then there will be no challenge left in this game.

I wonder if playing on controller might be better and perhaps a different class. Something like monk might be a little better for you.

Don't look at the flowchart pics, just get the basics down and you'll still be better than most. For SAM, I literally set up 3 rows on my tray for the 3 combos. The first one was 123 for the basic combo. The second row was shift1, shift2, shift3 for the secondary combo. And the third row was ctrl1, ctrl2, for the final combo. Doing this made it way more intuitive for me while learning because I was still just pressing 123, but with a modifier attached. Also if there are buffs you're just forgetting to use when they come available, put them on a new tray and increase the size of that tray so it'll show up bigger on your screen. I had to do that while learning bard until it felt intuitive. If your hands are hurting, consider one of those mmo mice just so you'll have less keys to actually press. These mice will have like a dozen buttons on the side and you can just press them with your thumb. idk if this will be easier or harder for your situation though.

Lots of guides get weighed down with minmax stuff. Glean the basics, and then just stick with that until you get comfy. There's a guy on youtube named WeskAlber who makes really good "basics" guides that help you through the whole leveling process. It's not a minmax guide by any means, but he's good at teaching the basics of a job. Since you mentioned SAM, here's his SAM guide. https://www.youtube.com/watch?v=CmPGIYBMd-g

I disagree. Simplification doesn't necessarily equate to "dumbing it down." That terms is also a little demeaning. I'm not dumb. I just have certain physical limitations. Another caveat here is that not everyone plays for a challenge. While some do find challenge fun, others don't.

I too, believe that everything should be changed to suit me and my tastes alone. If I do not enjoy it, it is unnecessary and SERIOUSLY NOT OKAY. Change it NOW!

And this is what happens when a game tries to cater to everyone. Alright devs, ball is in your court. Will you simplify further or make it more accessible? Are you going to make classes play more dynamically or ensure everyone is balanced? I can hardly wait for the answer~!

You lost me after using shift and ctrl. That's already too much. I do fine on my SMN. But even there, I feel there are superfluous abilities.

What about taking a very easy job such as red mage? Melee keeps you running most of the time so Id give up on that.
