Nut vendors have their set offerings and there are other ways to get those other items you're looking for. You can look back at Shadowbringers to see all that's offered once the the tier is complete.

If you want to help the crafters in your FC via adventuring, spend those astronomy tomes on the ingredients for the master recipe components.

I don't know what more to say other than learn to stop viewing this as a loss of nuts. You'll have your reserve for when the upgrade items come out and then it's back to farming, if that's your preferred route. If you're after the hunt achievement mounts, there's no way to avoid capping out currency. Even if they add more items to the vendor, you'll eventually be done with those as well. I stopped doing hunt trains once I got all I needed and I'll pick it up again with 6.3
