Hmmm my count is different:

FFIII: M. Knight (somewhat retooled to Dark Knight)
FFX-2: Dark Knight
FFXI: Dark Knight

Plus:

FFII: Leon
FFIV: Cecil

So it's definitely more than "two-but-really-only-one-of-note"
