The comment makes me think all new PCs, time skip, etc, but a slow buildup in 6.1 makes me think that we'll just be going somewhere unexpected with the same cast of characters.

Personally, if I had my wish, 7.0 would be a story completely separate from what we've seen so far (either just a different character in the same world, or something more dramatic). How to reconcile this with our existing characters and relationships is a big problem, but I think it's the most interesting approach. By far the thing I most want to avoid is the eventually integration of the 2.0 -> 6.0 storyline into some larger, grander narrative, as Kingdom Hearts and lately World of Warcraft have often failed to do. The saga of light and darkness as we have it is grand enough, and should never be subsumed into something larger.
If i remember right, Yoshi-P did say he wanted Season 2 storyline to be unrelated to the whole Zodiark versus Hydaelyn conflict the entire Season 1 storyline focused on believing the Zodiark vs Hydaelyn conflict should truely end in 6.0 as this has been the moment they worked on for so long to finally reach.

With this in mind, Season 2 most likely is not going to continue Season 1 storyline but act more like FF14-2 storyline where WoL face a new antagonist (or antagonists) that brings in a new threat to the world. There maybe mention of Season 1 stuff and maybe have certain parts of Season 2 events related to something Season 1 but the whole Zodiark, Ascians, and Hydaelyn conflict should be over.

How Yoshi-P and the development team can set this up are mostly guesses now but this is why I think Season 1 ending maybe a semi-clean slate event where WoL sacrifice himself/herself resulting in everyone forgetting about WoL. It will set WoL in a clean slate position while still recognizing that Season 1 still happened but people lack of remember WoL will not make them desire to drag him/her into their country's politics and he/she is treated as a normal adventurer. Thus the beginning of Season 2 storyline through 6.1 to 7.0 can focus on WoL starting back in his/her roots and slowly building up into once again saving the world from the new antagonist.

Along with some potentially interesting story once they reach that point since with people no longer remembering WoL, they can go over how easy the WoL had the ability to gain access to thing simply because of the stories being told about his/her actions as WoL compared to now when WoL is just another adventurer. With the fame all gone and reduced to a normal adventurer again, WoL may have to get a bit more creative to get people to listen or the story may provide a emotional reunion with certain characters (despite them not remember WoL) to help WoL get people to listen to him/her about the threat the new antagonists will bring.

I highly doubt that. That completely sounds like someone trying to justify a "Season 1" story skip system and/or RPer desire for their character not to be the WoL. It also pretty much cuts off all side story plot setup that has already occurred due to our characters already being the WoL. That is not setting up a Season 2, it is setup up a sequel with a completely different main character.

You never know with how things will turn out.

As I said, these are all just guesses and are expect to be wrong since we do not know what Yoshi-P and the development team have planned for the ending.

Only thing we know is that Season 2 said to be a new storyline that they want to be unrelated to the Zodiark vs Hydaelyn conflict due to having it all end in 6.0.

How does that account for the First already being visitable as its own world though? If it weren't for Shadowbringers and Novrandt, I would say it's an idea that has potential, but given that they can't just remove that area from play, I can't see it happening.
