Agreed, in the sense that it's chock full of healthy stuff with only a handful of the stuff that's high in cholesterol and carbs. Seriously, though, my favorite aspect of an MMO is the leveling experience, and I think that FFXIV's leveling experience was fantastic. Savix has a video where he's trying to convince the mods on his stream to try out FFXIV, and one of them asks, "How long does it take to level cap?" His response was, "You're thinking like a WoW player. The level cap doesn't matter. You can have fun at all levels in this game." It's refreshing to see that perspective return. The endgame is just that: the end of the game. Building an MMO around an endgame is a losing prospect because the point of the endgame is to keep you busy once you've run out of content. By nature, it's going to be grindy, difficult, and fun only for the most hardcore players. I'm so glad that SE hasn't completely lost sight of that fact the way that WoW has.
What you're so affectionately calling "meat and potatoes" is the part of the game that most new players could care less about. I know lots of people love raiding, but I personally don't find much joy in practicing against the same set of hardcore boss for days and/or weeks until defeating them is second nature, only to continue repeatedly farming them week in and week out for another pull at the loot lever. I prefer the diversity that's inherent in leveling a character: the changes of scenery, the plots twists in the story, the updates to my rotation, and the sense of power progression are the real meat and potatoes, in my opinion, and FFXIV has those in spades.
