Can you better describe what SCH's "flow" is for you?
Or what you like about it?

I recommend Paladin. I'd NEVER really played a tank in any previous MMO, including WoW where I played mages, archers, demon hunter, and other DPS roles, but no tank or healer. I started FFXIV earlier this year, decided to try out PLD, and immediately fell in love with the job. You feel invincible, breeze through story quests, have almost zero wait time for roulettes, and very little wait otherwise for dungeons, trials, any group event. I haven't tried a Healer role yet, but so far PLD is an absolute blast. The "flow" you mention (at least as I understand and can relate to it) is very, very smooth. The tools you get with PLD are all very useful: getting and maintaining aggro, AOE, even good DPS, and fantastic mitigation. Very very mobile playstyle (except when you want to be stationary to help out your positional-minded DPS cohorts in a dungeon). You typically set the pace and (again!) the flow of the dungeon expedition, you decide to pull wall to wall or go slow (I typically ask the group how they want it, or test the healer out with a couple pulls), or do a gogogo run. I've not been a big fan of dungeons before in WoW, but now I enjoy them a lot in this game because of the PLD job.
That's my experience in a nutshell. Good luck with picking a role, I'm sure you have many options, just enjoy the game in a leisurely way. Cheers.

Thinking about it...
...basically, the pacing of abilities, how frequently I have to move and act at the same time, and the number of things I have to pay attention to at once.
I also like the animations, but that's not related to the "flow" I was talking about.

Sounds like you might enjoy the casters.
They're all great, but BLM has some fairly unique movement tools so that might have a different flow than what you want.
Maybe start with RDM?
