I really enjoy SMN, but plan to drop it in Endwalker. If you thought SAM was "messy", you probably wouldn't like SMN anyways. So, I started to practice BLM and honestly it has been a ton of fun! The rotation isn't complex at all on paper. But, working around mechanics and knowing how to fix it if something goes wrong has been really satisfying to me. You can really squeeze out a lot of extra effectiveness from the job. I enjoy standing in AoE until the last second to get a Fire IV cast off, tether to a party member, then tether back to my ley lines after the AoE is gone. It's one of the few jobs that feels totally different on a training dummy relative to a boss. I also find it satisfying that you can genuinely see healthbars chunking.
AoE as a BLM is just hilariously satisfying. I love using Triplecast into three Flares followed by a Freeze and a proc'd Thunder IV. So many big numbers! I used to think Bane was my favorite AoE spell, but Flare beats it for me. I've seen a lot of BLMs hate the current AoE gameplay but I love it. Apparently Endwalker will shake this up a bit and I'm excited by that, too.
The only downside to current BLM is spamming Umbral Soul between pulls. But, it's not that bad. Just feels a little bit silly and I enjoy the look of four adventurers running together, so spamming Umbral Soul kind of messes up that look. But, eh. That's mostly for just dungeons anyways.
I also really enjoy RDM. Several others mentioned RDM already. It's a pretty guided job since you have two mana bars you have to balance. But, everything works pretty much perfectly together without any road bumps. Clutch VerRaise feels nice. Having a heal that is actually worth something on a DPS is also fun to me. Mobile thanks to movement oGCDs and Dualcasts mixed with slide casting. Endwalker RDM looks amazing and I'm super excited for it. I really dislike AoE on RDM and consider it the worst feeling AoE DPS. But, Endwalker is changing that!
Edit: Wow, this hat for my BLM glam makes my forum avatar look silly, ha.

IMO:
1. SAM - Not difficult but engaging playstyle with different gears. Hits like a truck, good mobility, flexible burst, and sweet sword sounds. <3
2. MCH - Not difficult but fast paced and oddly satisfying gameplay loop. Unique job with the tech fantasy. Wish it hit harder. :/
3. BLM - Best caster class I've ever played ever? Sublime at 80 (bit of a mess syncing down). Hard mode job can be exhausting to play but the reward is feeling like a god.
4. MNK - Kind of similar to MCH...something about MNK that scratches an itch but the loop isn't quite as satisfying. Sick animations. Looking forward to the rework.
5. SMN - Held together with duct tape and chewing gum but a caster that plays like ranged physical is fun times (occasionally). Rework looks bonkers.
6. RDM - Better designed than SMN but can get boring. Burnt myself out rezzing folks in Delubrum. Cool job. Might rate higher if not for the burn out.
7. NIN - Haven't played in over a year. Unique job, flashy, fast, but dull outside of trick attack window. I'd probably rate higher but it's been awhile. /shrug
8. DRG - Well designed job but SAM exists. Reminds me of SAM but SAM has more toys to play and Kenki is good stuff. I get bored with DRG sadly.
9. DNC - Not a bad job but RNG can make it dullsville. Flashy and I love the dash. Just not as engaging as MCH unfortunately.
10. BRD - Only dps I don't have at 80. Currently gathering dust at 71....yeah.
“There are no rules of architecture for a castle in the clouds.”
Samurai is a easy choice it’s hands down the best crafted job in the game for melee, Dragoon is a close second it’s simpler but just as fun, Monk is faster and more positionally strict but with True north and Riddle of earth it becomes easy to manage and quite fun after some practice
Ranged BRD is miles ahead of the other two kit wise, the proc-n-dot is well designed and despite the unjustified hatred over the daunting task of keeping your dots up, it’s a good time if you can endure the progression kit which hasn’t aged the best. If you want somthing simpler DNC is there, may get mundane but once you get Flourish the job shines abit more. It’s very easy and a A+ for people that are starting out, and MCH I guess, tons of people love it but also tons of people love McDonald’s. Take it with a grain of salt. Although it’s fun if you like spastic button mashing as a opener
Melees:
Sam and ninja are pretty fun, big numbers for one, fast without being a one button fest for the other
DRG: is quite well designed, just a bit under the 2 others for me
MNK: since the rework it's half dead
Casters:
BLM: prob the only job that dont get dumbed down every expansion, pretty fun concept
RDM: the principle is fun, but easy to get tired of from the simplicity of it, a casual favourite tho
SMN: the "concept" could be fun, but the execution is like fighting against the kit
Physical ranged, none is really fun imo and less damage than any others but:
BRD: actually have things to manage, concept is nice outside of the lvl 80 skill that is a bit forgetable
DNC: pretty, some attacks has big numbers, but very random procs
MCH: not very deep or complicated to get into, 24seconds per minute will be 1 GCD spam, very popular for the casuals because of the "speed".
ps: not saying casual in a negative way.

Surprised people like Samurai. Mine is not that high though. A lot of these responses are pretty varied too.
Kinda said it already but to me it doesn't really feel like a Samurai much at all, it's almost like the red mage. Unless someone knows something I don't about Samurai lore, it feels like they went overboard with the ice.
Going to try unlocking Machinist tonight. Even though I'll have limited skills at first, I have seen some really cool machinist videos.
Tbh sam doesn't start ramping up til 62, at that point sam gets double the amount of kenki if not more. at 68 ikishoten also gives sam a huge amount of kenki. at 76 sam unlocks tsubame-geashi and starts having a completely different flow (also a big difficulty spike). So maybe you didn't get far enough to feel those things out.Surprised people like Samurai. Mine is not that high though. A lot of these responses are pretty varied too.

For me, the NIN big burst dps, good AoE, good survivability and mobility.
It requires the right secondary stats and mastery.
Very rewarding to play, even if the majority blind don't even realize it.

Obligatory "play them all" post. I never understood the concept of asking others (if the hope was to find something you yourself might enjoy), because the people you're asking are not, in fact, you, and all will have their own individual reasons that may not parallel. I know it's not the answer you want, but it's still true. You can unlock every job in the game and get at least a small feel for the core right then and there. It may not be wholly representative of the class as a whole, but it's usually more than enough to see if it might resonate with you.
I had an assumed idea of what I'd like in the game when I first started back in ARR/HSW, but I find myself maining completely different things once I got into it, and enjoying far more than those overall.
"And all the Hyur's say I'm pretty sage – for a White Mage!"
I've been tanking for about 3 years now and it's become so boring and will be even more dumbed down in ew. With the plethora of tanks out there now I decided to level SAM for ew. I'm 71 and having a blast. It's not too complicated and not too dumb so imo it's a really smooth and fun job. I will be maining it in ew if that means anything.
