Healer may require quick reaction and button spam, escpecially in dungeons where you never know when someone screws up and tanks to pull big, so I wouldn't recommend it. Though if you're really into healing, I think WHM is a decent choice. It's pretty straight-forward with next to no planning in advance required. You push a button. It heals. Period.
It's aoe dps spell is less punishing thanks to the stun during the first three casts and it is the healer that relies most on hard-casts, so you don't have to worry about effective weaving to keep your tank alive.

PLD so far felt fairly slow but I haven't played it enough to give good advice on that front.

For dps I definitely recommend BLM. It is least dependent on oGCDs and weaving and the few oGCD it has are nicely spread so you have enough time to get used to each one as you level up. It's also a class that still does fairly good damage even if you stick to a very strict and subpar rotation and skip all the optimization and nuances you would need to pay attention to in endgame content. And while it does have procs it doesn't heavily rely on them like other classes, escpecially if you aim to play it casually.
For casual fun it's mostly standing on one spot, sticking to your rotation and enjoying big numbers.
RDM is a bit on the slower side but definitely not as much as BLM as it has more oGCDs and the melee combo is fairly quick. It's more mobile than BLM and Vercure definitely makes life easier if you miscalculated but overall it felt more spammy than BLM and relies a more on procs.

I play casual content as well. My biggest challenge is the occasional Extreme but I find the alliance and regular raids to be challenging for me so I have my fun.

Warrior, White Mage, or Red Mage are good choices but you can also try not mashing your next button repeatedly between gcd. You may also consider a couple of macros. (Here comes the fire). Slower button pressing and macros can make your play much more comfortable at slight loss to your DPS. You're not pushing the hardest content so you can still contribute good play but maybe not optimal play.

For casual content mostly everything should be fine, as there are usually no hard dps-checks and your gear and awareness of mechanics/boss attacks are more important then doing your rotatation the fastest way possible.
That being said I would tend to tank because you can decide how much to pull in a dungeon on how you feel. Depending on speed and clicks-per-minute I think anything but GNB should be good.
If you want to be a healer, I would suggest WHM or SCH, as AST is very 'clicky' with all the card-stuff between healing and dmg-dealing.
DDs have usually way more clicks-per-minute with a faster and more complex rotation than tanks or healer, but there are still some expections like the Black Mage, where ideal positioning and knowing/anticipating attacks and mechanics are more important than fast clicking, as their spells take more time and they can't move during most of their casts.

I highly recommend you try out whatever class/jobs interests you, OP. You may find something that just clicks with you and your condition.

    I am disabled too!

As a sorta WoW refugee, I can tell you FFXIV has an easy going feel due to their longer global cooldown. Your hands will be decidedly happier here.

Having the same sort of concerns as the OP, I have found the easiest class/job to level to be Conjuror and White Mage with Gladiator and Paladin to be almost as gentle on the hands.

Red Mages are the simplest damage dealers but you have to be of level to pick the class up but I feel you will enjoy tanking more than you will enjoy a damage dealer or healer.

Tanks are the least busy of roles in FFXIV.

Yes, but, it also happens to be the only job reducible to five or so buttons if you want to macro things for accessibility.

I can't for the life of me figure out why people keep recommending PLD as an "easy" tank job. PLD has by far the most utility oGCDs of all tanks, and nearly all of them are used regularly.

Warrior is the easiest and least-hectic tank job. There is almost no weaving and no double-weaving required. You can get away with an VERY low APM on it. Perfect for someone who has trouble with their hands hurting as you don't have to press many buttons at all.

    Honestly surprised nobody suggested dragoon.
    For melee:
Samurai isn't that fast of melee but it's not slow, it's not too hard to pick up. However they do have the most gcds to press because the kenki gauge.
So you would be doing shinten a lot so I wouldn't recommend samurai.

My suggestion would be dragoon for melee. Reason being it's the slowest out the 4 melee.
It still has a lot of ogcd but you don't spam them like samurai.

Though honestly, the melees press a lot of things so honest opinion is to not play them.

I wouldn't bother with any physical range sadly.

Brd is the worst to play with your condition, same with mch and dnc as dnc is proc base and mch is very fast pace with tons of ogcd to press repeatedly.

    For magical:
I would say rdm for ease of use and not too spammy.
BLM is iffy because it is pretty spammy and can be fast.

    Tanks:
    Honestly...any of them.
Though pld,war and dark are a bit spammy on their burst but its nothing too fast pace you have mash and Gnb is the fastest tank but not very spammy.
Though gnb I would probably test out last because it is the dps like out the tanks.

Dragoon has a ton of buttons to press even just for their main GCD combo skills. If someone has mobility issues, having too many button presses outside of easily reachable keys is a pain. I broke my left arm completely in 2 about a year and a half ago and the number of buttons I could easily press was vastly reduced, even moreso once the cast came off and I had to rely on my muscles for stability rather than the cast. I had trouble playing even the simplest rotations for several months and even a single dungeon run was enough to cause pain in my arm and overall fatigue.

RDM was the only job I was able to manage during that time due to its simplicity, so I'd recommend RDM for being the lowest button presses on average. Their main rotation is only 5 buttons because 3 of their spells get replaced with their procced versions. They only have 3 oGCD to weave regularly with plenty of time to weave them because of Dual Cast and none of them need to be used in specific places in the rotation so you can be relatively leisurely in using them. Their melee combo is rare enough that you can get away with mouse clicking it.

I think the most important thing to remember is that there is no need to actually spam buttons very quickly, as abilities are queued to go off if you press it slightly before the GCD is up. I've found this window is actually very generous, and I very rarely press a skill more than once to make it go. (Macros don't queue up though, but are executed immediately, so be aware of that.)
