I'm guessing here, but the Helion's last name is basically "of -royal bloodline-" and the Lost are "child of -mother-". Most likely why there's a lot more random surnames for the Lost, think there is probably established royal bloodlines for the Helion's.

I can't really pinpoint anything for the Viera. They have some old norse and some hebrew, so it doesn't feel consistent? Guess we'll see when we get an official naming convention.
I was told many Veena Viera surnames are places near Ivalice. Besides that though, linguistically they appear, at least to me, part afro-carribbean part latin-based.
