I love the post-MSQ dialogue options they added for him and would like to see more like these. However, it makes sense not to introduce any strictly romantic options. While flirty quips like "I'm your rolanberry" can be added, the game simply can't be bent to allow for a plausible romance story, which means any romantic advances by the WoL will have to be rejected. (Queue more complaining.) It would take too much resources to develop a romantic relationship in a believable way, think the dinner with Aymeric x 1000 and more, and that for each available NPC. It could be somewhat pulled off with an NPC we create similar to retainers/path companions, who stays at our house and/or fights by our side and has a few short dialogue lines. And even that would feel stilted. Imagine how a romance with a major NPC would have to be developed - the impact it would have for the story, all the different interactions with the rest of the NPCs, it's just too much resources for a side feature. It would also make some players who would like to know more about an NPC and see more of them feel forced to pick a romance option even if they don't want their character to be in a relationship with an NPC.
