We had a shield class, it was called Sentinel. It was scrapped back in 1.0 and shield use became classless (as SEN used the offhand anyway and thus required a main class to actually use). And as it's abilities were all just given to GLA/PLD natively anyway I don't see this coming back in any shape or form.
Also I don't see SE going down the path of copying FFXI's Job system (despite some people here seeming wishing they would) with the whole 'Job and weapon type are seperate and you can equip multiple weapon types on the same Job', as that is not what FFXIV's Armoury System is about. Here your class/Job is your weapon (it's why the class, and to a certain extent, Jobs, feature a weapon image as an icon). this is why we also had the much maligned cross class system in the first place - the original idea in 1.0 was so you could mix and match different abilities with different weapon types. Of course players wanted dedicated roles and so SE ablidged by changing things to more rigid roles made even more rigid with the addition of Jobs (and further with the whole cross class ability system system's replacement with role abilities).
The sad fact is, you are not going to see a WHM being able to wield a great axe or a DRK a gunblade for instance. New weapon types will continue to be added, but as new Jobs, not simply tacked onto existing ones. It simply will never happen.

I am talking about Jobs that use a combination of two different weapons as their ONE SINGLE MAIN WEAPON.
Such as the Modern Assassin Job being a Job that use a Pistol on his left hand and a Shortsword on his right hand. Like the Gunblader from Dungeon Fighter Online

I am not talking about Jobs getting two different weapons to choose from.
Heck if SE wanted they can even introduce a Job that use a a Gauntlet on their Left hand for defense and grabbing enemies with a One-handed Axe on the Right hand for their offensive attack and chop enemies they grab as the next Tank Job and call it Berserker or Viking

I'm still a bit curious to see what people may want to see a future Job Mix Dual Wield as their Main Weapon of Choice.
Nunchucks, hope I'm saying that right, but yeah, I been wanting those in a game for awhile and would like to see it as a melee dps.
The Limsa leader who's name I can never spell right uses 2 guns. Also one of the quest NPCs for MCH uses a 1 handed axe + a gun. Raubahn dual wielded 1 handed swords until he sort of ended up only having 1 hand.
There are a number of other weapons in the FF franchise of games that haven't been put to use here yet
I wouldn't mind more classes making use of shields. Gunbreaker could have been made to make use of a shield given the size of the weapon though it would have detracted a little from that FF8 squall image. One of the tank characters in the mobile game Kings Raid actually has this setup as a weapon. Given that a shield is a general defensive implement I just don't see why its really been limited to Gladiator/Paladin. They have for the most part phased shields out of Conjurer/WhiteMage Thaumaturge/BlackMage as they'd also pretty much phased out 1 handed wands/rods for them as well. At the same time that offhand/subweapon slot sits there empty for every other combat class.
They're NPCs though who have long thumbed their noses at the Armoury System and do things we simply cannot (look at Alphinaud and his many unique Carbuncles). Just because a npc uses weapons in a certain way does not mean players will ever be able to do the same sadly. Especially in the case of Rostnsthal (the MCH npc you mentioned, although he's not a MCH himself, he's a MSK which was a class meant to be added to the game but never did and MCH ended up taking on it's role) - he's been dual wielding a flintlock pistol in one hand and a single handed axe in the other since 1.0's launch, without so much as a passing reference from SE as to why he can do that and players can't. It's simply to look cool and impressive.
Sadly that airship has sailed. As I mentioned in my previous post shield use was meant to be used by multiple classes as the SEN class, but was scrapped when SE redesigned the Armoury System in preperation for the addition of Jobs. As shield use then became GLA/PLD's 'hat', hence why it was restricted to what could equip it (THM/BLM and CNJ/WHM could still equip certain types of shields as a legacy of the old system, but they're generally only lower level). And it's pretty telling that SE are not interested in changing this, what with PLD's very Job icon being a literal shield - you are not going to see any new class or Job make use of them, that's just being realistic.I wouldn't mind more classes making use of shields. There is no need to involve off-hand slots anyways.
They can easily just combine the two different weapons into one single weapon like they did with Rogue's Dual Daggers but with two different weapons instead.
Such as the Great Arm Claw/Mace for a new Sentinel Tank Job and the Pistol/Shortsword for Modern Assassin DPS Job I mentioned in the first post.
As you said believing they will use Off-handed weapons again is unrealistic but it is realistic that SE will combine the two dual wield weapons of different weapon types into a single Main Weapon.
As for Shield, well we may see Shields return in future Jobs but not as Off-handed Shields and rather something a bit more creative. For example, if a Great Arm Claw/Mace Job is introduced, the Main Weapon will be a single image of both the Great Arm Claw and Mace weapon in the image thus completely removing the need to separate them into two different items for Main and Off-hand but instead considered a single weapon category being Main Hand weapon.

Sword/Dagger job was certainly one of my top 3 choices but then I thought that they can cover that by providing some future weapons for ROgue/Ninja to be Sword/Dagger combo like Thancred did in his 3.X to 4.X as a Rogue. We know SE can do it but they just need to put the effort into design the weapons.
I am surprised they have not yet added Thancred's 3.X to 4.X Dagger weapon into the game or Mogstation considering how some people will go crazy for that weapon for their Ninja
