Never done this myself. To each their own, but to me it feels PtW. I also go by an unwavering mindset that says, "why buy it, when I can make it?"
I also enjoy going out into the open world to gather mats. If mob drops weren't abysmal I would be out there even more. I dream of beastmaster as a new gathering class that facilitates acquiring mats such as hides, fangs, blood, skins, etc.
I only feel bad when the game forces me to say yes to progress a quest when I want to say no.

Healing DRK is literally... the same since ShB. The reason why people think it's a meme to heal nowadays because DRK receives very little to no buff to their sustainability vs 3 other tanks getting something useful. If you're capable of healing DRK back in ShB (or any tanks), then you'll heal EW DRK just fine.
I have never done this, mostly because I know I'm gonna want to eventually make or gather the item anyway and the process provides exp.
I got sick of falling asleep at my computer every time I clicked to gather something. Since then I leveled all the gathering almost exclusively through the market board/GC turn-ins. I have to have something to do with my money, I guess. It's not like buying/furnishing a house would interest me. I might feel guilty if there was anything that I used the gathering classes for besides having a miner retainer. I don't know how to get collectibles and haven't done the higher level class quests.
I tried to make it a point to have all of my crafting at level one with zero experience. I almost cried when I accidentally turned in a piece of hempen underwear, and it leveled a crafter class to 2.
Some people enjoy crafting and gathering. I will never understand them. It's like saying you actually enjoy jogging... or cleaning the house.
I would only feel bad about lying to Y'shtola or Merlwyb. Lying to the goddess Yotsuyu would be okay. She's into that sort of thing.
Everyone else is just using the WoL. Lying is part of the game.
If just using those two methods, this is actually probably one of the least efficient methods to leveling your gatherers. Clearing your gathering logs not only provides tons of exp (keep in mind you will check off the weekly bonuses through happenstance when you gather), and along with leveling the respective retainer will then pretty much take away the need to ever go gather that item again yourself, unless mass producing. But I do get how gathering can be tedious and boring for some players.
I enjoy both jogging and cleaning the house! It's not really the act of doing it that I enjoy, but rather the sense of accomplishment I feel after doing so. Crafting and gathering isn't much different, but it isn't out of the realm of truth that some players actually choose the path of greatest resistance. I'm one of them. Got something to slow down my progress to max level that still gives me a sense of accomplishment? I'll take it!
Nope. If the game wanted it to be crafted by us, they would make it require our signature on the item, or use a system like collectables to ensure the item couldn't be transferred.
In short, they fully expect some players to simply buy the item.
The same can be said about the pathways in this game. If SE didn't want you take shortcuts by jumping down to lower ground which should kill you, they would make sure it did so.
All marketable crafted items had to be made before they were sold initially. Unless there's some chicken or the egg metaphor going on here.
