When I'm about to turn gear into materia I get that feeling like when I opened a pack of pokemon cards! I know I'm gonna get something but what will it be and will it be a normal card or a holographic?! I don't want materia to be predictable. That would be boring. Having variety in types and numeric value makes it interesting.
And how much materia have you actually socketed?

All the system does is create waste. People reject materia with lesser values, while they hold out for higher value materia. If the goal was simply to force players to craft and stimulate the economy, they should just give the process a rate of failure, or have them break down into other USEFUL items. Producing waste is not exciting gameplay.
