From a lore perspective, the lack of more "ninja" styled weapons makes sense. The entire Ninja bloodline and style are from Doma, a land that has next to no contact with the Eorzean alliance. Functionally we are in fact, Rogues, with the training of a Ninja. Thus, the preponderance of weapon will be the ones used by the Rogues, which means simple daggers and knives.
