Considering you need a max of 8 every 4 days, I think the gathering rate is just fine. If you want more than that to sell, then you'll have to put in a little more effort to get those.

They have already been buffed via ventures. I really can't see them going further than that.

I don't know about buffed, but they were added. 1 an hour. An increase to the amount they can bring back would be a welcomed change, even if just 3.

A max of 8 per garden patch. I'm currently caring for 5 patches - that's at least 40 soils needed a week, more, actually, since 2 patches don't take 6-7 days to harvest.
