I want to skip the whole crafting/gathering part of the game, because I only enjoy end-game crafting. Could I just have my BiS crafting gear done for me when I log in tomorrow? After all, it is the content I want, and tomorrow is when I want it.

Might as well be. People have different tastes. Some want to skip the game and do raids. Some want to ignore the story and roleplay. I want to be a super crafter, but why should any of us have to work for it? :P

Name any other MMO that blocks you from doing a new expansion's content even if you are of appropriate level if you haven't completed all of the quests in the previous expansion.

That's a badge of uniqueness that FFXIV should not wear with pride. It's a horrible slog to click through hours upon hours of cut scenes - possibly wasting XP on a class you have ZERO interest in. I would really like to make a hyur machinist, but there's no way I'm leveling some other random class to 50 just to have the "privilege" of grinding fates and dungeons on machinist 30-50. It's absurd.

For gathering it kind of is, cause there are nodes that are in HW only areas.
