In my mind, simple solution would be to make it go faster.
You can get a Goobbue mount from the Sylph beast tribe dailies. There is a unique colored one you can't get anymore but you can still get one.I suppose, there is always Chocobo coloring ^^ But yeah I see where you are coming from, although, that definitely doesn't change my opinion on seeing more mounts in the game.
For example, the majority of people I pass by in Eorzea are either on foot (because they haven't got a mount yet) or on a standard company Chocobo. Occasionally I see the odd person on a Goobbue which I guess are quite rare as I think they had something to do with before the game was fully launched or something, but from what I've seen, there are no real fun or interesting mounts.
Once you get farther in the game you will see a variety of mounts. There are a quite a few. Granted there are a lot of reskins but just unique models wise we have chocobo, fat chocobo, fat moogle, zu, ahriman, bomb palanquin, dire wolf, dracolisk, that ugly sahagin mount, horses, Adamantoise, Fenrir, gobwalker, primal birds, pegasus, gryphon, dragon, wyvern, Twintania, allagan defense nodes, mini airships, warhorses, war lion, war bear, couerls. It's pretty extensive.snip

Like Daemius said, wait til you get further into the game. Some of the mounts are rewards from achievements or from primal battles and they look awesome! The 2.0 primals each drop elemental based ponies and the 3.0 primals drop birds.
I think we can all agree the next mount will be Doom Train
