I learned from experience. Buy a G1 covering form and count the total number of stars, then buy a G9 covering form and count the total number of stars. Since RNG plays a factor into how many stars each parent has for each attribute, there's no guarantee that higher grade covering forms will always have more stars, but it's true most of the time. The best G9 covering form I ever got had about 28/40 stars, while the worst I ever got had about 17/40 stars.
If you're trying to breed an ultimate racing chocobo and want make 1-3 of its stats a perfect 500, your chocobo is level 50, it's out of allowances, and the remaining value to reach 500 is not a multiple of 15, you're screwed. No amount of stat resets will save you, and you will either need to breed another chocobo and start over, or sacrifice stat points.Pretty sure he wanted stats from food reset. It could be done if more data was added to store training stats separately. Kind of like how players get stat points on levelup, and get to use Hymns to reset them.
(I would really like it if our stat points allowed for as much build variation though. Maybe let us distribute secondary stats like crit/det/spd instead? D: )
Simplified: Pretend your chocobo is rank 50, you have 0 allowances, have only fed it grade 3 blends, and it's maximum speed is 490/500. You reset the stats but refeeding it brings it back up to 490/500 maximum speed. If you train it one more time, you will be wasting 5 attribute points. The safest way around this is to max the attribute early while leveling. Thus, resetting stats earned from feeds will not help you get a 2250 chocobo unless RNG has blessed you like no other.
Super Sprint forces your chocobo to run at 500 speed regardless of weather, terrain or negative status effects (excluding Lamed) until it runs out of stamina. That means even if you're hit with a Graviball (Heavy), you will not slow down! The downside is that while using Super Sprint, your chocobo's stamina drains very quickly. To help with this problem I also trained it to have Choco Cure III which restores 12% of its stamina, helping me power through the last leg of the race. The worst thing that can happen to me is getting hit with Bacchus' Water which makes my chocobo's stamina drain even faster. To prevent this, I take caution to notice what items are in the chests ahead of me so I can decide whether I want to take the first item to prevent it from being used on me, or to leave it because I don't want the second item being used on me. (In my case, if the first item is Bacchus' Water, take it and use it immediately so it can't be stolen. If the first item is not Bacchus' Water but the second item is, ignore the chest)
Please be as specific as I was or else you'll misunderstand what I meant again. I said that covering forms are used for more than just breeding a higher grade fledgeling.
The higher grade forms have a higher chance of having parents with more stars which is extremely useful for breeding a high star, low grade fledgeling, as well as for getting an early start on breeding a 40 star chocobo.

G9s are no better "on average" than G8s. G8s are no better "on average" than G7s. G7s are no better "on average" than G6s. G6s are no better "on average" than G5s. G5s are no better "on average" than G4s. G4s are no better "on average" than G3s. G3s are no better "on average" than G2s. G2s are no better "on average" than G1s.
The point is that each grade of form has a best and worst outcome. Higher grade forms have a higher best outcome. The chances of you getting a form with the best outcome are extremely low, but the chances of you getting a high grade form with an average outcome are better than your chances of getting a low grade form with a high outcome.
Think of it like this: G8s can have 15-30 total stars and G9s can have 16-32 total stars. The odds of getting a G8 chocobo with 25+ stars would be 33%, but the odds of getting a G9 chocobo with 25+ stars would be 47%. (these numbers are not actual, but the concept is)
