Figuring out what to play.

I've leveled a ninja and dragoon both to 60 (other classes at random levels) and played for a while maining ninja then got bored of the game and quit for a while. I'm back now and not sure what I should play. I'm not looking to be a raider looking for a full time group, i have people i can join though. I was looking into playing a machinest, but the difficulty vs reward seems low. I want to have fun mainly, but not have something super difficult either. Any suggestions on what i should play or look into?

It's not too intense managing the many fires and spells with the same name and different numbers, while doing everything else? is there a lot of on and off global cooldown weaving?

Just keep leveling and playing jobs until you find one that absolutely clicks with you. It's bound to happen.

I thought I had found my main many a time.

My drg just got to 58 but I have to save it's the most fun I've had put of any dps job so far.

The opener is just too fun with all the jumps and the animations are seriously on point as well. Disembowel and chaos thrust just feel fantastic to use.

Summoner is fun, managing your dots and pets while also having high potency nuke spells is fun, the age potential is great as well.

Honestly, I enjoy all the dps jobs, but it's hard to recommend someone one with such a broad statement like yours.

Try dragoon again I guess, or try monk maybe.

There's really no other way to do it ya know?
I personally enjoy Ninja the most when it comes to dps.

I try as best I can to keep a Healer/Tank/DPS geared up. I find this helps me not overplay any one thing and gives me options when playing with friends. It also keeps things fresh.
You might even find a class you never dreamed you'd enjoy. Like Scholar is for me.

Figure out what you dislike, then go from there. For me I don't enjoy casting as a DPS, so SMN BLM BRD and MCH are out. I don't enjoy positional heavy classes so MNK is out.
I'm left with Dragoon and Ninja.

If you like oGCD I would play BRD, its similar to MCH as you mentioned, but it is not as difficult, for the same or greater reward.

I still like my ninja and it is my favorite melee, I want something different though. The MCH right now seems pointlessly over complex, but it looks neat. The bard is cool, but I want the damage and it's too utility to top charts. The BLM and SMN could be good options, I just don't know a thing about them and how they operate.

SMN has a very complex opener to maximize DPS but you can push very high managing your oGCDs, DoTs, Pet buffs and stuff. BRD is really fun to play (granted, former BRD mains hate it for the exact same reason I love it but I come from casters, so...) and somewhat simpler than SMN, you can still be a somewhat decent BLM doing the ARR rotation and trating Enochian as a temporary buff. It's mostly on how comfortable you feel with the class and gameplay.
