Although the day/night cycle is fairly realistic changing between day and night at 6am and 6pm Eorzea time (which is around the time of day in the real world dawn and dusk will occur, barring seasonal variations of course), the weather system not being random and instead changes at fixed times doesn't seem realistic and appears to just be a placeholder that was overlooked during development and never changed.

It's not a game-breaking issue, but does become noticeable if you stand in the one zone for an extended period and see the weather change like clockwork, reminding me of that joke from Back to the Future II when Doc looks to the sky and tells Marty exactly when it will stop raining: "Right on the tick! If only the Postal Service was as reliable as the Weather Service!"

I actually prefer it that way °-°
Of course the weather forecast NPC would still work, but I'd have to be like "Oh, it rains for only 2 hours? Wait, how am I ever gonna catch that special fish?" and "Aaah sorry guys, weather just changed, I need to abandon group to get that Icognita Eorzea progress!"

What weird kind of place is Eorzea anyway, I've wondered for a while now...sun rising at 6 am (actually, it dawns even earlier!) is clearly a summer thing. But night starting at 6 pm is like...deep winter or really REALLY early spring ._.

It must be nearer the eastern edge of its timezone than you are within yours. Being further east will make both occur earlier. That, and they likely don't use daylight saving time (which when active moves both later).
