In a dungeon Sure though what about outside?
Before you answer not background even though backgrounds are nice or just chunks of rock and little bits and pieces of places, talking full blown city destroyed but dark like that no sunshine just dead cloudy rain all the time thunder.
Just a place to explore that would like want you to stay in that zone not do your fates and be done with it and its a dead people in FFXI least stayed in zones not because of quest or other things just because they liked the area.
Makes me think of the boat rides in original FFXIV when I say thunder how amazed I was with the black clouds and thunder strikes it was pretty well done left me in awe much.
Though recently seeing the 3.2 stuff the battle music that was playing was in awe but thats music I want to see something that catches my attention and look, my cousin took me to zi'tah in ffxi and I seen those huge trees where the zone was to the gods and the boyahda tree it was like my favorite place to be used to take the outpost warp just to sit there in the zone or walk around and maybe kill some goobbues.

The Shroud is more of a mixed deciduous forest. It's also a wet, low elevation forest. I'd prefer a coniferous forest; they're very different habitats with different wildlife, forest/underbrush density, and weather patterns. Other than having trees, they are not terribly similar. What we have in XIV's Shroud now can be classified as a "Woodland" rather than a forest, due to the large amount of open space.
That seems to me what the OP is asking for, not just a generic "forest." To keep up with the XI comparisons, compare the plant life of Wajaom Woodlands and Jugner Forest. Completely different flora and fauna.
Forests do not fall under one catch all category, just as valleys and grasslands do not. There are still a lot of ways for XIV to explore different habitats and there's really no reason for the OP to be written off.

id love to see a zone/instance that changes everytime you enter, different paths, different monsters depending on the weather, different spawn points for bosses/chests etc etc never that same whenever you go in it :P

I'd love to see an underwater zone. There can be many possibilities for different landscapes, from the deep chasm to a vibrant coral reef and anywhere in between. A town/city inside a giant spiral shell, perhaps?
There are a lot of candidates for zones like these, Xelphatol and another Dravania area for a dense forest, More of Abalathia or a random island from Vylbrand as the volcanic zone, maybe add an underwater area that's in Vylbrand, maybe add creepy and abandoned places in Coerthas, abandoned places due to the Calamity, and existing hidden ruins as the lost cities/civilizations, like Belah'dia, Sil'dih, Amdapor, Gelmorra, etc. Some already existing though, but usually as dungeons.
Honestly I'd like to see the dungeons being more exploration-friendly, without the time limit, not being linear, no "trash" mobs but a few powerful enemies and having more places to look at all that, or at least they make a different kind of dungeon content that feels like the good ol' dungeons FF games had, or remake existing dungeons to be like that. Heck, even FFXI had dungeons like those.

Things I expected to EXPLORE in FFXIV:
We see treehouses, we don't go in them (or have one of our own.....&%#$)
Islands we see on exploration maps. Woot lets explore this isl.....uh....I guess its just the..little robot then?.......%&#@!
An evil alternate reality world (Void maybe, THAT I CAN FULLY EXPLORE ON AN OVERWORLD MAP LEVEL) where enemies are creepier and different. (difficulty is w/e, SE too cute to make them harder). Hoping that message Lousoix had something to do with that and not another 24 man raid....ugh.
And just about everything in the backgrounds of most overworld maps. Aside from the obvious crappy leaf and grass textures it has a natural charm of exploration and adventure.
