Just unlock everything, even if you're not going to use themWhen you travel the cities just be sure to unlock all classes, both battle and craft. Even if you are not going to play them at least they are unlocked for later in case you need to or decide you want to try it out. It doesn't hurt anything and just increases the number of gear sets you can have
If you fail to unlock them can you not go back and do it later? Sorry for another newbie question!
Don't worry, you can always come back later to get them, they never vanish or anything
It's just more convenient to unlock them when you are in town anyway, because you might not be back in a while.
And, like Anima said, you can use a greater number of gear sets the more classes you have unlocked.
You can just throw away those level 1 gears if you don't plan to immediately level the class right away. All of those weapons are available from NPC vendors in their respective cities.
Unlocking all the gear sets is definitely a good idea. It's one of the first things I did when ARR launched.
