I'm no dev, but both versions of Omnislash you're describing would be considered physical blows. In Advent Children, if you look closely, he's not using "energy blades", he's using the separated pieces of his Fusion Sword and attacking with them individually. The individual blades apparently just glow during the technique. As for the victims never getting "cut to bits"... well, the Final Fantasy series has never really been known for its realism when depicting injuries or hyper-violence.

Though why does the weapon pass through them without physically chopping them in half? So if its not energy then what is it, because that's not physical if it was physical it would sever limbs or leave gashes.

I know its RPG though they show sephiroth cut in half when you hand him the black materia so this is why I question it.

Isn't it possible that while the slashes appear to cut clean through, they are in fact only hitting the surface of the skin, or creating cuts that do not entirely sever the target? Additionally, given that the person in question is Sephiroth, isn't it also possible that he has an innate healing factor that heals his wounds before they become visible, with instead of physical damage causing his defeat, it is instead the energy drain on his body from healing the damage that would otherwise be seen? Just my thoughts on the matter if looking at it from a more logical viewpoint rather than going the easy "it's a fictional game" route.....

They are physical blows. His body doesn't get cut into little pieces because, 1) it's not a slasher film, and 2) it would ruin his dramatic "death" and then turning back into Kadaj would make even less sense than it already does. It has nothing do with logic. It's one of those things you're meant to just go with because it looks cool.
