I would meld on the cheaper side and wait and see before going for the crazy melds xD
Except for maybe the accessoires, as they can be capped with only 1 grade V I think.

yeah
1x Craftsmanship V
2x CP IV
2x Control IV
caps them
Its a bit cheapter to do
1x Control V
2x CP IV
1x Craftsmanship IV + 1x Craftsmanship I OR 1x Craftsmanship II + 1x Craftsmanship III
but then youre missing out 1 Control from the cap.
I will be only crafting and melding accessories and belt, while also crafting the tools but using them without melds
Not sure if i even bother with the AF2 since they are pretty bad without melds for the effort and its too expensive to meld 8 sets
Also you can cap the rings without any V.

Well aside from the mainhand and body, to a less extent, the other pieces are better than their red scrip counterparts with only a couple of melds really. But I see where you're coming from nonetheless.
There's been like 4 grade 5 crafting materias sold on my server period so far. I bought the only one up yesterdayI guess the good news is with tier 4s found on airships, there could be an influx into the market reducing the price of them. I think you're right though. Maybe I'll just put 3 tier 4s into my body piece for now and see what happens before going for the crazy overmelds.
