The big thing that makes a lot of players instantly love Matoya is that she's one of the very first NPCs you meet in the first Final Fantasy, and the theme song that plays in her cave is a remixed version of the one from FF1. So for a lot of us, it's nostalgia mixed with her relationship with Y'shtola, and the frogs and brooms.

FF1 was FF1 in America. The confused ones were 2 - 6. They skipped 2 and 3 for America, so when we first got Final Fantasy IV it came out as Final Fantasy II. They then skipped 5, so when we got Final Fantasy VI it was called Final Fantasy III.
Matoya was a witch in FF1 who was important for a fairly early plot, and her brooms taught players how to open up the world map by speaking in backwards sentences, which is why the brooms in FFXIV speak backwards sometimes.
