Not a fan of this. When I put up large amounts of an item it's because I want to sell the whole stack. I will price accordingly - ie, volume discount. Allowing people to then pick one or two is like allowing people to open the bag of 12 buns and only select 2 of them, putting the bag of 10 back on the shelf.

The only way this would work would be to allow the seller to select whether or not the stack can be sold in smaller quantity.

Or it would be like, you know... Allowing people to buy buns which only had 5 inside as opposed to forcing them to pay for more (i.e. 12) that they wouldn't want. This applies to the real world as well, imo. I hate being forced to buy a bigger box of something and pay more just because they don't have a lower quantity in stock.

Or you could just go to the bakery and select individual buns.

No, it really is like allowing you to tear open the package and only buy part of the contents. If I list an entire stack, it's because I want to sell an entire stack. On the rare occasions I do list an entire stack, I list them at a lower price to encourage someone that might actually be able to use that entire stack to purchase it. When I list smaller quantities, I typically mark up. You get the choice between a larger package at a cheaper per-unit price, or a smaller package at a higher per-unit price. I personally don't want for people to be able to cherry-pick my stacks and just take 1-5 of them at a time. If I want to sell 5 at a time, I'll list them that way.

It's more than QoL. It would have an enormous impact on how the market works.

I think you're missing their point. We (sellers) put stuff on the market according to what sells and what makes us gil. We sell a certain quantity for a (selfish) reason, not to appease you (buyers). I usually sell things in quantities of 1 because I can charge a double or triple the price. On the flip side, sometimes if I want to clear our my inventory I'll sell things in larger quantities at a discounted price to move it faster.

TL;DR Sellers put stuff on the market according to what is more convenient to us and makes us more gil. Everything else doesn't matter.
